I reach for this one whenever I have no time and I need something now. Low effort, big payoff. If you’re in NYC and need a bite, hit a bodega and grab one of these.

Chopped Cheese

Ingredients

  • 4 oz ground beef
  • ¼ bell pepper, thinly sliced
  • ¼ yellow or sweet onion, thinly sliced
  • 2 slices cheddar cheese
  • 1 sandwich roll
  • Leafy greens (lettuce or similar)
  • 2–3 tomato slices
  • Salt
  • Black pepper
  • Mustard, mayonnaise, ketchup, or other preferred condiments

Steps

  1. Thinly slice the bell pepper and onion. Slice the tomato and prepare the leafy greens.
  2. Heat a heavy-bottomed skillet over medium-high heat. Add the ground beef and immediately chop it into a fine mince with a spatula.
  3. Add the onion and bell pepper. Season generously with salt and black pepper, continuing to chop and mix everything together as it cooks until the beef is browned and the vegetables are tender.
  4. Top the beef mixture with the cheddar cheese, then immediately place the sandwich roll, cut-side down, over the beef for 15–20 seconds to lightly steam the bread.
  5. Transfer the cheesy beef mixture onto the roll. Add your preferred condiments, then top with the leafy greens and sliced tomato.
  6. Wrap the sandwich in parchment paper and let it steam for 15–30 seconds. Slice in half and enjoy.

Notes

Give your pan enough time to preheat so that it’s ripping hot before you start cooking.
