My love for Korean is embodied by this bowl of noodles. I always keep a 1 lb. tub of gochujang in my fridge, and this is mostly what I use it for.

Chili Peanut Noodles

Ingredients

  • 2 tbsp gochujang
  • 2 tbsp peanut butter powder (or peanut butter)
  • 1 garlic clove, minced
  • ¼ cup reduced-sodium soy sauce
  • 1 tbsp honey
  • 2 tbsp gochugaru
  • 1 tsp sesame oil
  • Juice of ½ lime
  • Splash of rice vinegar
  • 1 package ramen noodles
  • 3 eggs
  • 2 scallions (green parts only), chopped
  • ½ cucumber, cored, smashed, and chopped

Steps

  1. Whisk together the gochujang, peanut butter, garlic, soy sauce, honey, gochugaru, sesame oil, lime juice, and a splash of rice vinegar to make the sauce.
  2. Cook the ramen noodles according to the package instructions.
  3. Fry the eggs to your preferred doneness.
  4. Toss the cooked noodles with the sauce.
  5. Add the chopped scallions and the smashed cucumber, then toss everything together until well coated.
  6. Taste and adjust the seasoning as needed.
  7. Transfer to a serving bowl and top with the three fried eggs.

Notes

Optionally add beef or minced beef or pork for added protein. Otherwise, you can just put three fried eggs on top to up the protein content. Add more gochugaru if you want it spicy.
